Creamy Smoked Salmon Dip

From Chef Carrie Mitchum of Fuel Cafe comes this subtly sensational appetizer.


4 oz smoked salmon

4 oz cream cheese

4 oz sour cream

4 oz mayonnaise

Zest and juice of 1/2 small lemon

1/2 small shallot

1 T. capers

Pepper to taste

In a food processor combine salmon, cream cheese, shallot, and capers. Process until creamy. Transfer to a bowl and add remaining ingredients. Mix well by hand. Chill. Garnish with cucumber slices and dill. Serve with crackers, crostini, bagel chips, crudite, or your choice of bread.
