Mac 'n' Cheese

Classic comfort food gets a kick with the help of <b>dish's David Nestler

Mac 'n' Cheese

1 lb. Mostaccioli

1/2 lb. quality smoked bacon, diced

1 med. onion, diced

2T garlic, minced

4T butter

4T flour

1/2 gallon milk

1 cup grated Manchego cheese

Pinch nutmeg

Salt and white pepper to taste

1/2 cup breadcrumbs

2T olive oil

2T minced parsley

1T minced garlic

Cook pasta and shock in cold water.

In a sauce pan, sauté bacon, onion, and garlic with butter until translucent. Add flour and stir until a paste is created. Slowly add milk, stirring constantly as to avoid lumps and to prevent scorching on the bottom. Remove from heat and add cheese and seasonings. When slightly cooled, add pasta.

Combine breadcrumbs, oils, garlic, and parsley.

Fill a Pyrex or casserole dish with the pasta mixture and top with the breadcrumb mixture.

Bake at 350 for about 20 minutes or until the top is lightly browned. Allow to cool for about 5 minutes and serve.
