We decided it was time for a fresh look at Paulette’s, now that the popular restaurant is comfortably settled into its downtown home at the Inn at the River.


The restaurant, along with its new chef de cuisine Kelly Hartman, is featured in “Dining Out” in the March issue of Memphis magazine.


Unfortunately, Pam’s Pics, a standard companion to restaurant reviews, are not online. They are only included in the print edition of Memphis magazine, available at newsstands in Memphis, including The Booksellers at Laurelwood.


So here are my three favorite dishes at Paulette’s restaurant, along with Justin Fox Burks' beautiful photographs.

Pan Seared Day Boat Scallops ($28): So beautifully plated it’s hard to dig in, four oversized scallops slip across a lake of lentils and apple cider gastrique made with, among other things, prunes, dates, and cherries. A whisper of fennel leaves rests on top.


Seafood Cioppino with French Bread Crostini: Part of a fixe prix dinner, this heavenly stew is like a sensory trip to the port of Genoa, mixing mussels, shrimp, white fish, and tomatoes and around a tender heart of fennel bulb cut into quarters.


Twice Baked Goat Cheese Soufflé ($9): Is anything more magical than soufflé? Rich enough to share, this mini ramekin proudly puffs up to anchor chili-spiked honey glaze, peppercorns, and a triangular sail made with polenta crackers.
